APPLE PUFFED PANCAKE 
6 eggs
1 1/2 c. milk
1 c. flour
3 tbsp. sugar
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. cinnamon
1 stick butter
2-3 tbsp. brown sugar
2 apples, peeled & sliced thin

Preheat oven to 425 degrees. In blender mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended. Melt butter in 12" fluted quiche pan or 9"x13" baking dish in oven. Add apples to butter. Return to oven until butter sizzles. Remove from oven and pour batter over apples. Sprinkle with brown sugar. Bake on center rack 20 minutes until puffed and browned. 6 to 8 servings.
