MINI CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 can cherry pie filling
Vanilla wafers

Beat all ingredients until fluffy. Use muffin tins and cupcake paper liners. Place liners in tins and put 1 vanilla wafer in bottom of each. Mixture will make approximately 14 cakes. Pour mixture into liners and bake at 275 degrees for 25 to 30 minutes. Cool and top with cherry pie filling. These can be frozen.
