SUPER RICE 
1 c. regular white rice
1/4 tsp. lemon juice
1 c. + 2 tbsp. frozen peas
Sugar substitute equal to 1 tbsp. sugar
1 onion, diced fine
2 tbsp. salad oil
1/2 tsp. parsley flakes

Cook rice according to directions, substituting lemon juice for butter. Cook peas; add sweetener. Saute onion in oil until wilted and golden. Add peas and onion to rice. Garnish with parsley. 8 servings, 127 calories per serving.
