CHESS PIE 
1/2 c. butter
1 1/2 c. sugar
1 1/2 tbsp. cornstarch
1 c. whipping cream
4 egg yolks
1/2 tsp. vanilla
Cinnamon and nutmeg

Mix the butter, sugar and cornstarch, then about 1/3 of the cream and mix until smooth. Add the well-beaten egg yolks, then remainder of cream, vanilla and mix thoroughly. Pour into pie shell and sprinkle top with 2 tablespoons cinnamon and 1 tablespoon nutmeg.

Place in 350 degree oven and bake in middle of oven for about 50-60 minutes or until done when tested with toothpick or silver knife in center and it comes out clean. After the pie is baked, make meringue from the 4 egg whites, 8 tablespoons sugar and 1 teaspoon vanilla. Spread over pie and bake at 325 degrees until the desired brownness.
