NUTTY CHEESE CAKE 
CRUST:

1/2 lb. graham crackers, crushed
1/2 c. butter, melted
1 tsp. cinnamon
1 tbsp. sugar

FILLING:

2/3 c. sugar
4 eggs
1/4 tsp. salt
1 c. cream, whipped
1 1/2 lbs. cottage cheese
2 tbsp. lemon juice
Grated rind of 1 lemon
4 tbsp. flour
1/2 c. chopped nuts

1. Mix cracker crumbs, melted butter, cinnamon and sugar together. Firmly press on the bottom and sides of a 9" spring form pan.

2. Beat eggs and sugar until light and fluffy. Add salt, lemon juice, grated rind, cream, cheese, flour and nuts. Blend thoroughly.

3. Pour mixture into spring form pan and bake in a 350 degree oven for about 1 hour or until cake is firm. Turn off heat and allow cake to cool in the oven. Serves 8.
