VENISON JERKY 
2-3 lbs. venison
1 tsp. onion salt or powder
1 tsp. garlic salt or powder
1/2 tsp. black pepper
1 tbsp. Morton Curing Salt
1/4 tsp. crushed red pepper (opt.)
1 tbsp. liquid smoke
1 tbsp. soy sauce
1 tbsp. ketchup
1 c. warm water

Mix all ingredients and marinate meat overnight. Lay marinated strips over oven racks. Cover bottom of oven with foil. Cook at 175 degrees for 4 to 6 hours until fully dry.
