FRESH LUMPIA 
3 tbsp. oil
2 cloves garlic, minced
1 c. sliced pork
1 sm. onion, sliced
4 c. cabbage, shredded
2 c. celery, sliced
3 c. diced potatoes
1/2 c. tofu, cubed, optional
3 tbsp. soy sauce
Salt and pepper to taste
1 pkg. lumpia wrapper (fresh)
1 bunch romaine lettuce

Heat oil, saute garlic and onion in large skillet or wok. Add pork and stir fry over medium heat about 4 minutes. Add potatoes and cook until soft then add celery and carrots. Add cabbage and tofu and stir fry again for 2 minutes. Season with soy sauce, salt, and pepper. Drain for about 10 minutes then wrap. Makes 8 servings.
