CASHEW CHICKEN SALAD 
1 tbsp. butter
2 to 3 c. cooked cubed chicken pieces
1/4 c. chopped celery
1/4 c. chopped onion, or less
1 can cream of chicken soup
3 oz. chopped cashews
1 sm. can chow mein noodles

Simmer chicken, onion and celery in butter until tender. Mix meat with soup. At this point mixture may be refrigerated until serving time. Combine with remaining ingredients and serve on cantelope slice, tomato wedge, or lettuce cup.
