EASY OVEN LASAGNA | |
1/4 lb ground turkey or ground beef 3/4 c. water 4 c. Marinara sauce 8 oz. uncooked lasagna noodles 1 c. low fat cottage cheese 3/4 c. sliced part skim Mozzarella cheese 1/4 c. grated Parmesan cheese Preheat oven to 375 degrees. Brown meat in nonstick fry pan and drain well. Add water and Mainara sauce; bring to boil. Remove from heat. In 9 x 13 dish, layer sauce, uncooked noodles, cottage cheese, Mozzarella cheese; repeat layers, ending with sauce and Parmesan cheese. The sauce will be runny. Cover dish with foil and bake for 1 hour. Let stand 5 to 10 minutes before cutting into squares. Makes 6 to 8 generous servings. Sliced mushrooms make a nice addition to sauce. The whole thing can be made ahead and refrigerated until time to cook. Might take a little longer, but don't overcook, noodles get tough then. Sometimes I end up with an extra layer and use a little more noodles and cheese. YUM! MARINARA SAUCE: About 4 cups. 1 clove garlic, minced 1 tbsp. olive oil 2 (16 oz.) cans tomatoes 2 (8 oz.) cans tomato sauce 1 tsp. oregano leaves 1 tbsp. chopped or dried parsley Saute' garlic in olive oil. Add tomatoes and tomato sauce slowly. Stir in oregano and parsley. Bring to a boil and simmer covered for 20 minutes to 2 hours. Break up the tomatoes with a potato masher and stir sauce occasionally. Use as pizza sauce, lasagna, etc. For Mexican flavors, add ground cumin (1/2 to 1 teaspoon), and hot sauce. |
