BACON - CHEDDAR MUFFINS 
1 3/4 c. flour
1/2 c. shredded Cheddar cheese
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground red pepper
1 egg, beaten
3/4 c. milk
1/3 c. cooking oil
1/3 c. bacon crumbs

Stir together flour, cheese, sugar, baking powder, salt and red pepper. Make a well in the center. In small bowl combine egg, milk and oil. Add mixture all at once to flour mixture. Stir just until moistened (batter is lumpy). Fold in crumbled bacon. Fill muffin cups even with top. Bake at 400 degrees for 20-25 minutes. Makes 8 muffins.
