BAKED PORK CHOPS
6 double pork chops (3/4-1" thick)
4 c. soft bread crumbs (do not pack)
1/4 c. melted butter
2 tbsp. chopped onion
1 tsp. salt
1/4 tsp. pepper
1 tsp. poultry seasoning, if desired

Cut a slit along side of the chop (or when you buy chops ask butcher to do it), cutting into meat almost to bone to make a pocket for dressing. Mix bread crumbs, butter, onion and seasoning. Stuff some of the dressing into each pocket. Fasten the edges together with a toothpick. Season chops with salt. Place in a shallow pan. Bake uncovered in moderate oven (300 degrees) 1 1/2 hours. Serves hot.
