ANTHONY WHARF CRAB DISH 
2 c. crab meat, cooked
1/2 c. diced onion
1/2 c. celery
3/4 c. Mornay sauce
3 tbsp. Parmesan cheese
Dash Tabasco
Dash Worcestershire sauce

MORNAY SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. half & half
1 tsp. white pepper
1 tsp. salt
1/2 c. Swiss cheese, grated
1 tbsp. Parmesan cheese

Add cooled Mornay sauce to crab meat, onion, celery, Tabasco sauce and Worcestershire sauce in mixing bowl. Mix well. Put mixture into shallow dish. Heat at 350 degrees for 10 minutes. Sprinkle Parmesan cheese and broil until golden brown. Serve with crackers and lemon wedge.

MORNAY SAUCE: Melt butter over low heat, stir in flour. Cook over low heat and stir in half and half and spices. Then stir in Swiss and Parmesan cheese. Heat and stir constantly. Makes 1 1/4 cups.
