LOOT FISH AND WHITE SAUCE 
About 5 lb. dried loot fish

Place in a closed towel in boiling water for 10 minutes. Remove. Serve hot. Serves 8.

WHITE SAUCE:

3 1/2 tbsp. butter
3 tbsp. flour
2 c. milk
Salt to taste

Melt 2 tablespoons of butter, mix in flour slowly. Gradually add cold milk, stirring mixture over medium heat, until sauce thickens. Add the rest of the butter and salt. Serve with Loot fish. Loot fish and potatoes are spiced at the table with salt and freshly ground allspice.
