BEEF STEW A LA ITALIA 
This great - tasting one dish dinner is ideal for those who want big flavors and less fat. Savory and spicy and loaded with fresh vegetables, it "weighs in" at just 222 calories per cup.

1 1/2 lb. lean beef chuck, cut into 1" cubes
2 tsp. vegetable oil
1 lg. onion, cut into thin wedges
2 cloves garlic, minced
1 can (28 oz.) plum tomatoes, undrained, coarsely chopped
1 lg. baking potato, peeled & cut into 3/4" chunks
2/3 c. Pace Picante sauce
1 tsp. dry basil leaves, crushed
1/2 tsp. dry oregano leaves, crushed
1/2 tsp. salt
1 lg. green pepper, cut into 1" pieces
1 lg. zucchini, cut into 1/2" pieces
1/4 c. grated Parmesan cheese

Place meat on rack of broiler pan. Broil 4 inches from heat until lightly browned, turning once. Heat oil in large saucepan over medium heat. Add onion and garlic; cook 3 minutes. Add meat, tomatoes, potato, Pace Picante sauce, basil, oregano and salt; bring to a boil. Reduce heat; cover and simmer 1 hour or until meat is tender. Stir in green pepper and zucchini; simmer 10 minutes or until vegetables are crisp-tender. Serve with cheese and additional Pace Picante sauce. Makes 8 servings, about 8 cups stew.
