RICE PUDDING 
1/2 gal. milk
1 c. UNCLE BEN'S® rice
1 c. sugar
2 eggs
1 tsp. vanilla

Put milk, rice, sugar and vanilla in pot and cook over medium heat for 1 hour, stirring often so it doesn't stick to bottom of pan. Take off stove and beat in the 2 eggs; return to stove and cook for 5 minutes more. Pour into bowl and sprinkle with cinnamon or nutmeg. You can also add raisins if desired.
