BROCCOLI CORN BREAD | |
3/4 stick butter 1 med. onion, chopped 1 box chopped frozen broccoli, thawed and drained 4 eggs slightly beaten 2 c. sharp Cheddar cheese 1 box Jiffy cornbread mix Melt butter in oven proof pie plate. Mix all other ingredients. Pat into pan with butter. Bake at 425 degrees for 15 to 20 minutes or until brown. Cut into small pie shaped pieces. (I used butter, 3 egg substitute and 2 egg whites, light cheese). |
