BAKED RICE PUDDING 
1 c. cooked rice
Cinnamon
1 c. skim milk
1/4 c. raisins
2 eggs (or Egg Beaters)
1/2 tsp. vanilla extract
1/8 tsp. nutmeg
Sugar substitute to equal 4 tsp. (2 packets)

Heat cooked rice, milk and raisins to a boil. Add rest of ingredients. Stir and add slowly. Bake in 8"x8" pan at 350 degrees for 20 to 25 minutes.
