FRIED RICE 
4 c. cold rice, cooked
2 eggs or egg substitute, beaten
2 green onions
1 c. bean sprouts
1 c. cooked diced chicken, pork, beef or shrimp
4 tbsp. cooking oil

The rice should be cold and dry. Stir with a wooden spoon or with wet hands, to separate grains. Cut onions into small pieces. Heat wok or large frying pan. Add 1 tablespoon oil. Stir fry onions. Turn down heat. Add eggs and cook. Set aside in bowl.

Heat wok to high. Add 1 tablespoon oil. Stir fry the meat or shrimp. Add soy sauce. Set aside. Heat 1 tablespoon oil. Stir fry rice just enough to heat it well. Mix in meat or shrimp. Fold in eggs, breaking them up into small pieces. Serves 4.
