PARSLEY POTATOES 
6 med. red potatoes (about 2 1/2 lbs.), peeled & quartered
1/4 c. water
1/4 c. butter
1 tbsp. dried parsley flakes
1/4 tsp. salt
1/8 tsp. pepper

Place potatoes and water in a 2-quart casserole; cover. Microwave at High (100%) until fork tender, 12 to 15 minutes, stirring after half the time. Let stand 5 minutes. Drain and set aside. Place butter in 2-cup measure. Microwave at High (100%) 1 to 1 1/2 minutes. Stir in remaining ingredients. Pour over potatoes. Toss to coat. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
