BAKED FILLETS | |
1/4 c. butter 1/3 c. chopped celery 2 tbsp. chopped onion 1 tbsp. chopped parsley 1/4 tsp. sage 1 c. bread crumbs or quick old-fashioned oats 1/2 c. Cheddar cheese 1 1/2 lb. fish fillet Salt and pepper Heat oven to 375°F. Melt butter, add celery, onion and sauté until tender. Remove from heat, stir in parsley, sage, bread, cheese. Sprinkle fillets with salt and pepper. Lay half the fish in greased pan. Spoon dressing (see below) over it. Lay rest of fish over this. Bake until fish is tender. DRESSING: 2 tbsp. butter 1 can lg. mushrooms 2 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 1/2 c. milk 1/2 c. light cream Melt 2 tablespoons butter, add mushrooms, cook until lightly browned. Blend in flour, salt, and pepper. Gradually add milk and cream. Cook over low until thickened. Pour over fish in pan. |
