CHOCOLATE-NUT RAVIOLI COOKIES | |
1 c. sugar 1/2 c. shortening 1/4 c. butter, softened 2 eggs 1 tsp. vanilla 2 1/2 c. flour 1 tsp. baking soda 1/2 tsp. salt 3/4 c. chocolate morsels 3/4 c. nuts Honey Chocolate sprinkles or finely chopped nuts Mix sugar, shortening, butter, eggs and vanilla. Stir in flour, baking soda and salt. Divide dough in 4 equal parts. Cover and refrigerate 2 hours. Process chocolate chips and nuts in food processor 45 to 60 seconds or until mixture begins to hold together. Heat oven to 400 degrees. Roll one part of dough into a rectangle 12"x8". Cut dough into 12 rectangles, each 3"x2". Place one teaspoon chocolate-nut mixture on to one end of each rectangle. Using metal spatula or knife dipped in flour, carefully fold dough over filling. Pinch edges to seal. Press edges with fork dipped in flour. Place on ungreased cookie sheet. Bake 6 to 9 minutes or until cookies are lightly browned. Brush warm cookies with honey. Sprinkle with finely chopped nuts or chocolate sprinkles. Repeat with remaining dough. |
