BLENDER HOLLANDAISE SAUCE | |
3 egg yolks 2 tbsp. lemon juice 1/4 tsp. salt 1/8 tsp. cayenne pepper 2 sticks (1/2 lb.) butter 1. In the container of a blender put egg yolks, lemon juice, 1/4 teaspoon salt and cayenne pepper. 2. Melt butter until hot and bubbly, but not brown. 3. Blend egg yolk mixture on low for 3 seconds. 4. Raise speed to high and carefully remove blender cover. With blender still running, pour hot butter in slowly, in a steady stream. Continue blending for 5 more seconds. Transfer to serving bowl and serve. |
