DIET BLUEBERRY COFFEE CAKE 
2 c. blueberries
Artificial sweetener to equal 7 tsp. sugar
Cinnamon, nutmeg to taste
4 eggs, separated
2 tsp. vanilla extract
1/2 tsp. butter extract
1/2 c. evaporated skim milk
4 slices enriched white bread, toasted, crumbled

Place blueberries in baking dish. Sprinkle with sweetener, cinnamon and nutmeg; set aside. Combine egg yolks, vanilla, butter extract and skim milk in small mixing bowl; mix well. Beat egg whites in small bowl until stiff. Fold egg whites and bread crumbs into egg yolk mixture. Pour over blueberries. Bake at 350 degrees for 55 minutes. Yield: 4 servings.
