TORTELLINI SALAD 
2 lb. tortellini
1 zucchini
2 tomatoes
1/2 red onion
Salt
Pepper
Fresh parsley
Basil
Olive oil
Locatelli grated cheese
1 can black olives, sliced

Cook tortellini as directed. Do not over cook. Meanwhile, chop up zucchini, tomatoes, red onion, and some fresh parsley. Add olive oil, salt, pepper, basil and cheese to taste. Toss together with olives and combine with tortellini. Can be served hot or cold.
