ENCHILADAS | |
2 lg. cans enchilada sauce 1 lb. hamburger 1 to 2 lbs. grated Colby cheese 1 lg. can refried beans 1 pkg. corn tortillas 1 chopped onion (optional) Brown hamburger and drain. Mix refried beans and heat until hot. Heat small amount of oil and dip tortillas in hot grease for a second, then drain on paper towel for a minute. Dip into enchilada sauce and fill with hamburger and refried bean mixture, onions and small amount of cheese. Roll up and put seam side down in greased cookie sheet. When you're finished with all the tortillas, pour remaining enchilada sauce over enchiladas and sprinkle with remaining cheese. (You might like more cheese.) Bake at 350 degrees for 30 to 45 minutes or until heated through. |
