WHOLE WHEAT APPLE CAKE | |
2 c. whole wheat flour 1/2 c. wheat bran or oatbran or wheat germ 2 tsp. baking soda 1 tsp. cinnamon 1 tsp. salt 1/2 tsp. nutmeg 4 c. diced peeled, tart apples (4 large) 3/4 c. white sugar 3/4 c. brown sugar 1/2 c. oil 1 c. chopped walnuts 2 eggs, well beaten 1 tsp. vanilla Stir together flour, bran, soda, cinnamon, salt, and nutmeg, set aside. In large bowl, combine apples, sugars, oil, nuts, eggs and vanilla. Add flour mixture and stir gently with a large spoon; blend well. Turn batter into a greased 13x9x2 inch pan. Bake in preheated 350 degree oven for approximately 40 minutes or until cake pulls away from sides of pan. Cool, sprinkle with confectioners' sugar if desired. This is a very moist cake, it keeps well. |
