PLANTAIN AND STEW 
3 yellow plantain (or ripe)
1 c. vegetable oil
1/2 c. chopped onions
2 lg. red tomatoes
Salt
1 tsp. curry powder or nutmeg
1 c. cut chicken or beef (boiled)

Slice plantain after peeling off skin. Each plantain cuts into 8-10 (pieces) slices.

Heat oil in saucepan, then fry slices until brown or golden brown. Set aside in a covered dish.

Remove oil. Turn range to medium heat, then add 1/4 cup of oil. Add onions, chopped tomatoes, salt to taste, chicken or beef. Cook for 15 minutes. Pour over plantain and serve with green vegetables.
