RICE STUFFED CORNISH HENS 
3 tbsp. butter
2 tbsp. chopped onions
2 tbsp. chopped celery
1/3 c. uncooked wild rice
1 c. water
1 tsp. lemon juice
1/2 tsp. salt
1 sm. can mushrooms (small)
2 Cornish Hens
1/4 c. butter, melted

NOTE: Bake at 350 degrees for 20 minutes, uncover and bake 30 to 40 more minutes, basting with butter.

Saute onions, celery and rice for 5 minutes. Add water, lemon juice and salt. Cover. Simmer 20 minutes. Stir in mushrooms. Prepare hens for baking. Sprinkle with salt and pepper. Stuff hens with rice mix. Tie legs together. Place in dish with breast up. Brush with melted butter. Cover and bake. Serves 2.
