SQUASH CASSEROLE 
3 c. cooked squash
1 onion, chopped
2 oz. pimento, chopped
1 carrot, grated
1 can cream of chicken soup
2 c. croutons (herb)
1 c. sour cream

Combine all ingredients, except crumbs. Add squash mixture and cover with crumbs. Bake at 350 degrees for 30 minutes. May use broccoli in same way.
