TARTAR SAUCE 
1/2 c. mayonnaise
1 tbsp. chopped onion
1 tbsp. chopped green pepper (optional)
1 tbsp. chopped dill pickle
1 tbsp. chopped sweet pickle
1 tbsp. minced parsley; or 3 sprigs fresh parsley, chopped
1 tbsp. capers (optional)
2 or 3 olives, chopped
1 1/2 tsp. tarragon vinegar or lemon juice (or mix)
A little sweet pickle juice

Combine all ingredients. Serve with fish. Makes 3/4 cup.
