SPICY PORK CHILI | |
1 1/2 lb. boneless pork loin, cut into 1 inch cubes 1 med. onion, chopped 1 med. green pepper, chopped 2 cloves garlic, crushed 1 tbsp. oil 1 tbsp. flour 2 (16 oz.) cans whole peeled, tomatoes, cut up 1 (16 oz.) can kidney beans 1 (4 oz.) can chopped mild chilies 1 (8 oz.) can tomato sauce 3 tbsp. chili powder 1 tbsp. ground cumin 1 tsp. salt 1/2 tsp. black pepper 1 1/2 c. shredded Cheddar cheese (optional) In 4 quart Dutch oven, cook pork, onion, green peppers and garlic in hot oil until pork is browned. Stir in flour, mixing well. Add remaining ingredients, except cheese. Simmer uncovered, 1 hour. If desired top servings with grated cheese. |
