EASY VEGEATBLE (RICE) BIRYANI 
(Serves 8.)

2 c. rice
2 cloves garlic
3 c. water
1 1/2 tsp. garam masala (spice)
1/2 tsp. turmeric
1 stick cinnamon
1 pkg. (10 oz.) frozen mixed vegetables, thawed
1/4 c. loosely packed cilantro leaves, chopped
1 sm. yellow onion, chopped
1 tbsp. oil
1/3 c. tomato sauce
1 tsp. curry powder
2 bay leaves
4 whole cloves
1 sm. onion and 1 sm. tomato (garnish)

Soak rice and wash, drain. Saute' onion and garlic in oil. Add 3 cups water, rice, tomato sauce, spices in large soup pot. Bring to boil, and cook covered for 20 minutes. When cooked, layer rice, vegetables and cover. Steam for 15 minutes. Garnish with tomatoes, onions and cilantro.
