COLD GREEN PEA SALAD 
1 lg. pkg. frozen peas
1/4 jar pimentos, chopped
1/4 jar artichoke hearts, chopped
4 sm. pearl onions or reg. sliced into rings
Italian dressing, less than 1/4 c.

Take frozen peas from freezer, rinse and drain. Put frozen peas into a 5 cup or large serving bowl. Add the chopped pimentos and artichokes. Next add the onion rings. These are optional. Mix Italian dressing over all and stir. Cover and let stay in refrigerator for at least 3 hours or overnight. Mix well and serve cold.
