TOM THUMB COOKIE BARS 
1/2 c. Crisco shortening
1/2 tsp. salt
1 1/2 c. light brown sugar, packed
1 c. sifted flour
1 tsp. vanilla
2 eggs, beaten
2 tbsp. flour
1/2 tsp. baking powder
1 1/2 c. shredded coconut
1 c. nuts, coarsely cut

Combine Crisco and salt, add 1/2 cup brown sugar and cream thoroughly. Add 1 cup flour and blend. Spread in 8x12 inch pan (greased and floured). Bake 325 degrees for 15 minutes or until lightly browned.

Add remaining 1 cup brown sugar and vanilla to beaten eggs. Beat until thick and foamy. Add 2 tablespoons flour, baking powder, coconut and nuts and blend. Spread over baked mixture. Return to 325 degree oven and bake 25 minutes. Cool and cut in small rectangles.
