AMARETTO CHIFFON CHEESE CAKE 
1 3/4 c. graham cracker crumbs
1/4 c. minced walnuts
1/2 tsp. ground cinnamon
1/2 c. butter, melted

Thoroughly mix together all crust ingredients in a bowl. Press onto bottom and sides of a 9 inch springform pan. The crust should be 1 3/4 inches high on the sides.

FILLING:

3 eggs, beaten
2 (8 oz.) pkgs. cream cheese, softened
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla extract
1 tbsp. Amaretto
1/2 tsp. almond extract
3 c. sour cream

Preheat oven to 375 degrees. Combine eggs, cream cheese, sugar, salt, vanilla, Amaretto and almond extract in a large bowl and blend well. Beat until smooth, about 2 minutes. Blend in sour cream. Pour filling into the crust and bake 35 minutes or until set. Cool. Chill thoroughly about 4-5 hours. Before serving top with fruit or fruit filling.
