TURKEY SOUP 
1 turkey carcass
4 qt. water
1 c. butter
1 c. flour
3 chopped onions
2 chopped carrots
2 ribs celery, chopped
1 c. uncooked rice
2 tsp. salt
3/4 tsp. pepper
2 c. half & half

Boil carcass in water, simmer 1 hour covered. Pick meat from bones. Set broth and meat aside. Add enough water to broth to make 3 quarts. Heat butter, add flour, cook over low heat 5 minutes. Stir constantly. Stir in onion, carrots, and celery. Cook and stir 10 minutes. Add broth, turkey, rice, salt and pepper and bring to a boil. Cover and simmer 20 minutes or until rice is tender. Add half & half and heat thoroughly.
