CARROT CAKE 
CAKE:

3 c. grated carrots (8 or 9)
2 c. sugar
1 1/2 c. vegetable oil
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. salt
2 c. flour
4 eggs
2 tbsp. vanilla

Mix and blend sugar and oil. Add soda, cinnamon, salt and flour alternately with eggs and vanilla. Add grated carrots. Pour into 3 greased and floured cake pans. Bake at 350 degrees for 30 to 35 minutes. Cool before icing.

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1 tsp. vanilla
1 c. chopped pecans

Cream together butter, softened cream cheese and powdered sugar. Add vanilla. Fold in pecans. Spread icing on cake.
