SUMMER SALAD 
1 (0.6 oz.) pkg. sugar free, orange-flavored gelatin
2 c. boiling water
2 c. cold water
1/2 c. sliced celery
1/2 c. carrot curls
1/2 c. coarsely chopped cucumber
Vegetable cooking spray

Dissolve gelatin in boiling water in a large bowl, stirring well. Stir in cold water. Chill until mixture is the consistency of unbeaten egg white. Fold in celery, carrot, and coarsely chopped cucumber. Pour into 10 (1/2 cup) molds coated with cooking spray and chill until firm. Yield: 10 servings.

Each serving: 1/2 cup. Exchanges: free. 11 calories, trace of carbohydrate, 2 gm. protein, trace of fat, trace of fiber, 8 mg. sodium, 0 mg. cholesterol.
