DONUT BALLS 
3 lbs. lard, heat to 375 degrees
2 tbsp. soft butter
3/4 c. sugar
4 egg yolks, beaten
1 c. milk
1 tsp. vanilla
3 c. flour, sifted
3 tsp. baking powder
1 tsp. salt

Combine butter, sugar and egg yolks. Add milk and vanilla. Blend in flour, baking powder and salt which have been sifted together. Drop batter (tip of teaspoon) into hot fat. Cook 2 to 3 minutes on each side. Roll in sugar. Makes 4 dozen. Variation: Add 1/4 teaspoon nutmeg or grated orange rind.

This is a superb recipe!!!! I used the cake mixer while I was adding in everything, the mixture turned really goopy and I didn't use a teaspoon since the shape that forms with a teaspoon wasn't round enough, so I oiled my hands and made small loose balls and put them in the oil, they became large and turned golden brown. I had a good time preparing these doughnut balls... Thank you!!!!
