STUFFED CHICKEN BREASTS 
8 chicken breasts, skinned and boned
1 c. stuffing (packed or homemade)
2 whole eggs, beaten
2 c. fresh bread crumbs
Oil and butter for frying
Half & Half

Slice chicken breasts to form pocket and fill with 1 tablespoon stuffing. Dip into beaten egg, then roll in bread crumbs. Place in refrigerator at least 1 hour. May be done several hours ahead. Heat oil and butter to 375 degrees and fry chicken 2 minutes on each side. Place chicken, in shallow baking dish, into 350 degree oven for 45 minutes. Makes 8 servings.
