HERBED VINEGARS 
1 qt. cider vinegar
1 c. chopped fresh tarragon leaves or 1 c. opal basil

Rinse either herb with water in colander. Place in clean jar and mash with wooden spoon. Fill jar with vinegar and let stand 3 to 5 weeks. Strain with cheesecloth and place in clean bottle with a sprig of fresh herb.

Can make simple salad dressing by using equal amounts of vinegar and oil; equal amounts of salt and sugar, and a pinch of pepper; mix well.
