CHEESE NUGGET POTATO ROUNDS 
4 med. red potatoes, in 3/4" slices
3 oz. Neufchatel or light cream cheese, softened
1/3 c. sliced green onions
4 tbsp. Molly McButter all natural cheese flavor sprinkles

Cook potatoes in boiling water 10 minutes or until tender; drain. With a spoon, scoop out a small portion of each potato slice, leaving 1/2 inch shell.

Mix potato pulp with remaining ingredients until smooth. Fill potato slices with mixture. Place on greased baking sheet. Bake at 400 degrees for 10-12 minutes or until lightly browned. Serves 8, 74 calories.
