BEAN SOUP | |
1 (16 oz.) pkg. mixed beans 4 c. water 2 (10 1/2 oz.) cans chicken broth 1 clove garlic, minced 1/4 tsp. pepper 1 tsp. salt 1 ham hock or 1 lb. ham pieces 1 lg. onion, chopped 1 (16 oz.) can tomatoes 1 (4 oz.) can chopped green chilies, drained 3 tbsp. lemon juice Rinse and sort beans. Cover with water and soak overnight. Drain in morning. Add 4 cups water, chicken broth, ham, garlic, salt and pepper. Cook slowly 3 hours. Add remaining ingredients and simmer 2 hours. Serve with hot cornbread. |
