SPANISH RICE & PORK CHOPS | |
1 1/2 c. rice 2 (8 oz.) cans tomato sauce 1/2 c. chopped onion 1 c. water 2 med. green peppers Salt Pepper 6 pork chops Season pork chops with salt and pepper. Place in single layer in 13"x9"x2" baking pan. Cut green peppers into 6 rings (1/2" each). Remove membrane and seeds. Place ring on each pork chop and spoon rice into rings and around rings. Chop remaining pepper and combine with tomato sauce, onion, water and 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Pour over pork chops and rice. Cover tightly with foil and bake in 350 degree oven for 2 hours or until rice is tender, basting rice with tomato sauce mixture. Serves 6. |
