SLC GARY'S QUICHE 
2 deep dish pie shells
12 med. eggs
1/2 carton half and half
4 fresh mushrooms
2 green onions, chopped
1/2 lg. green pepper, diced
10 slices bacon
3 tbsp. mayonnaise
Salt and pepper to taste
3 handfuls Swiss cheese (per pie)
Frozen hash browns

Brown 2 cups hash browns in a small amount of oil. Remove and drain off grease. Fry bacon. Saute vegetables. Blend eggs, half and half, mayonnaise and salt and pepper together.

Place hash browns, peppers, onions, mushrooms, bacon and cheese in pie crusts. Distribute evenly. Pour egg mixture in each pie. Bake at 400 degrees for 20-30 minutes or until set. Delicious!
