SAUTE OF YELLOW PEPPERS AND SNOW PEAS | |
3/4 lb. snow peas 2 lg. yellow bell peppers, or red bell peppers Salt to taste 2 tbsp. walnut oil or other fat Few springs of fresh tarragon, thyme or basil, finely slivered Few drops fresh lemon juice Freshly ground black pepper Snap off ends of snow peas and pull out the strings. Core and seed peppers. Cut into 1/4 inch slivers. Bring 2 quarts water to a rapid boil with 2 teaspoons salt. Boil snow peas for 20 seconds. Remove with slotted spoon and refresh under cold water. Drain. (Snow peas can be prepared up to 2 hours ahead). Just before serving, heat oil in a wok or saucepan over high heat. Add peppers and stir fry for 20 seconds. Add remaining ingredients and stir fry until heated. Correct seasoning and serve at once. Yield: 4 servings. |
