COCONUT CAKE 
1 pkg. white or yellow cake mix
1 sm. pkg. instant vanilla pudding
1/2 c. vegetable oil
4 eggs
1 c. water

Preheat oven to 350 degrees. Mix cake mix, pudding and oil. Add eggs and water; mix well. Bake in 3 (8-inch) cake pans for 20 minutes or 1 layer in 9x13 pan for 33-38 minutes.

ICING:

2 c. granulated sugar
18 oz. frozen flaked coconut
1 (8 oz.) container sour cream

Combine sugar, coconut and sour cream; mix well. Let stand while cake is cooking, stirring occasionally. When cake is completely cool, spread icing on top.
