ONE-HORSE-TOWN CHILI 
1 lb. ground beef
hot sausage, sliced (as much as you like)
assorted jalapeno peppers, diced
1 large onion, diced
2 (15 oz. ea.) cans peeled tomatoes
1 (27 oz.) can kidney beans
ground cumin, to taste
chili powder, to taste
pinch of salt
1 tsp. cocoa powder

Dice onions, assorted jalapeno peppers and fry together with ground beef in a large frying pan.

Note: Try to use a mixture of red and green peppers which will give your chili a more varied taste and better appearance.

Separately, in a blender, zip up the tomatoes together with some more peppers (I would suggest about three good-sized red peppers) which should give you a smooth sauce. At this point add plenty of ground cumin to your mix, as much chili powder as you think you need, a good pinch of salt and a large teaspoon of cocoa powder. Zip up again.

Add mix to frying pan. Add as much sliced, hot sausage as you like. Add one, good-sized can of kidney beans and allow to simmer for an hour. Make sure to cover your pan during simmering and if chili appears to be drying out" too quickly, add a little water during simmering.

Dish up with your favorite steamed rice.

Serves 4 to 5.
