GREENS WITH FRUIT 
Lettuce (may be iceberg and spinach or Boston, etc.)
Green onions (optional)
Celery
Orange
Strawberries
Kiwi (optional)
Red seedless grapes
Mozzarella or Provel cheese
Croutons

DRESSING:

4 tbsp. red wine vinegar
6-7 pkg. Equal
Dash of salt
Dash of pepper
3-4 pinches basil

1 c. safflower oil

Wash and dry your mixture of greens, onions are optional, cut celery at an angle very thin, cut fruit in bite-size pieces, top with cheese and croutons.

In food processor, add first 5 ingredients and pulse. Slowly add 1 cup oil while running processor on full speed. Chill. Toss with croutons and dressing right before serving.
