FUNNEL CAKES | |
Oil for frying 2 c. flour 1 tbsp. sugar 1 tsp. baking powder 1/4 tsp. salt 2 eggs, lightly beaten 1-1 1/4 c. milk Preheat oven to lowest setting. Line 2 large baking sheets with paper towels and place in oven. Pour oil into heavy skillet to 1 1/2 to 2 inch depth and heat. Sift dry ingredients, make a depression and pour in eggs and 1 cup milk. Gradually mix until smooth. Pour from funnel pitcher into oil in rings to make 6 inch cake, fry 2 minutes each side turning once with slotted spatula. When brown place on paper lined pans and keep warm. If batter gets thick add 1/4 cup milk, 1 tablespoon at a time. Serve with confectioners' sugar, syrup or ? Can use a funnel in place of funnel pitcher controlling flour with finger and moving funnel to make rings and 6 inch cakes - 1/2 cup batter at a time. |
